So, I may be a bit behind on the whole actually writing posts thing. I will definitely work on that. Anyway... When we moved into our new house, one of the things I was most excited about was having a garden in the already-started-for-me bed that was in the back yard. The former owners made sure to tell me that the soil in the bed was really good and they very nicely left me a kiwi vine to grown on the trellis at the one end of it. I had a small raised garden in our old house and grew a few tomatoes, cucumbers, and jalapenos in it, but this bed was huge! I really like growing my own vegetables and looked forward to the spring to start my garden. |
My garden was started with a mix of seeds and plants from Home Depot. Against my better judgement, I decided not to put landscape fabric down before planting and now my garden is so overgrown with weeds. It's sometimes hard to find the plants in there. Unfortunately, with working full time, spending time with friends and family, and having an autoimmune disease that often wipes me out, I just don't have the time to continuously pull weeds and turn the soil. I'll spare you the (embarrassing) pictures.
Thankfully, although it is overgrown by weeds, some plants have actually done well. I've already harvested beets, lettuce, green beans, tomatoes, cucumbers, hot peppers and zucchini. The first zucchini I found in the garden clocked in at a whopping 2 pounds, 4 ounces and was almost a foot long! I used it to make three zucchini bread cakes and I still had another, rather large, zucchini to do something with. In came zucchini pie.
This recipe is one I pieced together from a few recipes I found on pinterest until I made it my own. It's kind of a mix between a quiche and a frittata. I hope you enjoy it!
Zucchini Pie
Ingredients :
1 cup all-purpose flour
1 & 1/2 tsp baking powder
1/2 tsp salt
1 Tbsp shortening
1/2 vegetable oil
4 eggs
1/2 cup Parmesan cheese, shredded or grated
1/2 cup cheddar cheese, shredded
1 tsp garlic powder
2 tsp onion powder
1/4 tsp cayenne pepper (optional - but adds great flavor!)
Freshly ground black pepper to taste
Zucchini Slices (I used about 2/3 of a very large one and sliced using a mandoline)
Instructions:
Zucchini Pie
Ingredients :

1 & 1/2 tsp baking powder
1/2 tsp salt
1 Tbsp shortening
1/2 vegetable oil
4 eggs
1/2 cup Parmesan cheese, shredded or grated
1/2 cup cheddar cheese, shredded
1 tsp garlic powder
2 tsp onion powder
1/4 tsp cayenne pepper (optional - but adds great flavor!)
Freshly ground black pepper to taste
Zucchini Slices (I used about 2/3 of a very large one and sliced using a mandoline)
Instructions:
- Preheat oven to 350 degrees.
- Grease a 9 inch pie plate with cooking spray or butter and set aside.
- In a large bowl, mix the flour, baking powder, and salt together and then cut in the shortening with a pastry cutter until you have course crumbs.
- Mix in oil, eggs, Parmesan, cheddar, garlic & onion powders, cayenne & black pepper to crumbs until you have a thick batter.
- Layer batter and zucchini in the pie plate starting with a little batter, then zucchini, then batter, and so on until there is no batter left. I made sure there was a light batter layer on top of the last zucchini layer to give the top a nice golden brown color.
- Bake Zucchini pie uncovered for 35-40 minutes or until golden brown and fully set in the middle.
- This pie tastes best warm and re-heats well in the microwave.
